The Coyote Sourdough

Named for the Sycamore Canyon Coyotes.

The Coyote is Billy Bread’s flagship loaf: a naturally leavened sourdough made with bread flour and a touch of semolina, baked darker and deeper for a crackly, blistered crust and a chewy, mildly tangy crumb. It’s named after the Sycamore Canyon Coyotes, the mascot at Billy’s kids’ school in Newbury Park.

Sourdough and the Gold Rush

California’s 4th graders learn about the Gold Rush, and sourdough is part of that story. When people poured into California in 1849, sourdough came with them, and it has been part of California baking ever since.

Billy helps teach the Sycamore Canyon 4th grade class how sourdough traveled to California, and made this short video for them. The Coyote is the loaf he baked for it.
