From acting
jobs to a cottage license.
Billy Lush started baking sourdough in 2012 to stay busy between acting jobs. After enough years of giving away loaves on set, he earned a nickname — The Bread Guy — and the kind of quiet daydream that follows you around: maybe, one day, a real bakery.
When the world stopped in 2020, the daydream got loud. He researched California’s Cottage Bakery License, fired up the oven, and Billy Bread opened in September of that year. It has been, in his words, “quite the journey so far — a ton of fun, and amazing to feel a part of my community.”
Today the bakery is still a one-baker operation. Every loaf is fermented on its own schedule, scored by hand, and baked the day it is delivered. Sourdough is a living thing; Billy treats it that way.
