The flagship Billy Bread loaf. Coyote Sourdough is a naturally leavened, open-crumb sourdough made with bread flour and a touch of semolina — which gives the crust its signature golden color. It takes two days to make and about two minutes to disappear. A crispy, blistered crust gives way to a chewy, mildly tangy interior that makes every sandwich, toast, or torn-off chunk better than it has any right to be. Baked fresh every Friday in Newbury Park.
