Coyote Sourdough
The flagship Billy Bread loaf. Coyote Sourdough is a naturally leavened, open-crumb sourdough made with bread flour and a touch of semolina, which gives the crust its signature golden color. It takes two days to make and about two minutes to disappear. A crispy, blistered crust gives way to a chewy, mildly tangy interior that makes every sandwich, toast, or torn-off chunk better than it has any right to be. Baked fresh every Friday in Newbury Park. Order by Thursday. Contains wheat.
Aged cheese · Tomato confit · Anchovy and butter

“If you haven’t tried Billy Bread yet, you’re seriously missing out. His coyote sourdough is next level, perfectly crusty on the outside, soft and flavorful on the inside, with just the right tang. You can tell it’s made with real care and skill. Easily some of the best bread around. Highly recommend grabbing a loaf (or two) while you can!”
